3 Amazing Keto-Friendly Ice Cream Recipes that include, Orange Vanilla Creamcicle, Chocolate Peanut Butter, and Peanut Butter Cream.

Ingredients

  • Orange Vanilla Creamcicle
  • 1 Tbs of Swerve Granualated Sugar

  • 1 tsp Vanilla Extract

  • 1 tsp Orange Extract

  • 240 grams of Heavy Cream

  • 1 tsp of MCT Oil

  • Chocolate Peanut Butter
  • 1 tsp of MCT Oil

  • 1 tsp Vanilla Extract

  • 1 Tbs of Swerve Granualated Sugar

  • 2 Tbs Nuttzo Peanut Butter

  • 2 Tbs Cocoa Powder

  • 240 grams of Heavy Cream

  • Peanut Butter Cream
  • 1 tsp of MCT Oil

  • 1 tsp Vanilla Extract

  • 1 Tbs of Swerve Granualated Sugar

  • 3 Tbs Nuttzo Peanut Butter

  • 240 grams of Heavy Cream

Directions

  • Fill a mason jar with 240 grams of heavy cream (equates to 1 cup). If you are making all three flavors, you’ll need 3 cups of heavy cream or 720 grams. Try to get as close to 240 as possible.
  • Add your desired ingredients. You can use the measurements in the ingredients list as baseline.
  • Once your ingredients are added. Close the mason jar and shake vigrously for about 3-5 minutes.
  • After 3-5 minutes, you’ll start to feel the heavy cream thicken inside the mason jar and it will become increasingly difficult to shake. After a few minutes of shaking, place mason jar(s) in the freezer for at least 4 hours.
  • After 4 hours in the freezer, enjoy!

Notes

  • A key ingredient in the Keto Ice Cream is MCT Oil. By adding MCT oil in your ice cream it makes it softer.

MCT Oil To The Rescue

As a test, I didn’t add MCT oil to one of the Vanilla Creamsicle jars and it turns out, MCT oil really helps with the softness of the ice cream. I would highly recommend at least 1 tsp of MCT oil in each mason jar, maybe even more.

Which one was our favorite Keto Friendly Ice Cream?

The orange creamsicle was definitely on top of the list, but the chocolate peanut butter was just heavenly. The rich chocolate flavor was really intense and finishes strong with peanut butter. I think 1 TBs of granulated Swerve was enough sweetness that all the other flavors from extract came out beautifully.

Improvements to the Keto Ice Cream

I’ll need to play around with the amount of MCT oil added to the ice cream I think. While the ice cream flavors were amazing, the nut butter created a gritty sort of texture for the ice cream. I didn’t necessarily mind the texture, but it’s certainly not something you’d expect from ice cream. My guess is by increasing the MCT oil to 2 tsp and using smoother nut butter, the texture issue will be solved.
